In September I arrived at Guido’s campo to discover a new occupant: a seven month old female pig. Guido took me to her pen for an introduction. She stood on her hind legs and sprawled her front legs over the concrete wall, waiting to be petted. She was lively and engaged and very affectionate and my joy in meeting her was only dampened by the realization that in another five months she would be turned into pancetta. Alas! This is the Tuscan pig’s lot.
